Fresh Prune Cake
This is a wonderful cake that uses fresh prunes!

halved, de-pitted and sliced thin

all-purpose flour

butter

the zest of one lemon
Instructions
Using a springform pan, line the bottom with parchment paper.
Pre-heat your oven to 350 F.
In a large mixing bowl, add all the dry ingredients: flour, sugar, cinnamon and baking powder. Mix to incorporate.
In the mixing bowl of a standup mixer, cream together the butter and sugar on medium.
Add the eggs, milk and vanilla, continue to mix on medium until everything is incorporated well.
Add the dry ingredients to the mixer, a little at a time, and mix well.
Poor the batter into the prepared springform pan and smooth out with a rubber spatula.
Arrange the fresh sliced prunes close together on top of the cake, in a circular design or in straight lines. Really just use your imagination.
Place in the preheated oven for 40-50 minutes, or until a toothpick comes out clean.
Allow to cool before removing from springform pan.
Notes
Optional: You can dust with powdered sugar after the cake has cooled completely.
