

Grilled Orange and Thyme Shrimp
Ingredients
- 2 pounds large shrimp peeled and deveined, tails on
- 1 cup fresh orange juice
- 1-1/2 teaspoons grated orange zest
- 2 cloves garlic minced
- 2 tablespoons olive oil
- 1 tablespoon chopped fresh thyme + fresh sprigs
- ½ teaspoon salt
- ¼ teaspoon pepper
Instructions
- In a shallow dish or large Ziploc bag, combine shrimp, orange juice, orange zest, garlic, oil, chopped thyme, salt and pepper.
- Toss to coat shrimp.
- Marinate in the refrigerator for at least 30 minutes or a few hours.
- Once the shrimp have marinated, skewer them on skewers.
- Place skewers onto a preheated grill and cook for about 8-10 minutes on high heat, flipping them half way.
- Cooking time all depends on the heat of the grill how big the shrimp are.
This is a weeknight summertime favorite of mine. I like to eat this with Citrus Coconut Milk Rice!
