Crispy Potato Skins

Ingredients
  

  • 4 large potatoes
  • 1/2 lbs of Gorgonzola cheese
  • 6 slices pancetta or bacon chopped small and cooked until crisp
  • 2 green onions sliced

Method
 

  1. Preheat oven to 400 degrees F. Wash your potatoes well and piece them a few times with a fork.
  2. Place potatoes in preheated oven and bake 60 – 80 minutes until fully cooked through. They will feel soft if you squeeze them.
  3. Remove potatoes from oven and reduce oven temperature to 350 degrees.
  4. Let the potatoes cool enough to handle. That is at your discretion or use a oven mitt to hold the potato.
  5. Slice the potatoes into lengthwise halves and then scoop out the flesh, leaving about 1/4 inch of the potato intact with the peel.
  6. Place the flesh of the potatoes into a bowl and set aside (use later for mashed potatoes or potato fritters)
  7. Fill the potato skins with the gorgonzola and then top off with pancetta pieces
  8. Place the potato skins on a prepared baking sheet.
  9. Bake for about 10 – 15 minutes to melt the cheese.
  10. Sprinkle with bacon and green onions and serve warm and with sour cream.

These are really freaking good. Occasionally I get a “hankerin'” for something along the lines of good ole american bar food. And I just improvised a little bit, and came up with this!
