

Crispy Potato Skins
Ingredients
- 4 large potatoes
- 1/2 lbs of Gorgonzola cheese
- 6 slices pancetta or bacon chopped small and cooked until crisp
- 2 green onions sliced
Instructions
- Preheat oven to 400 degrees F. Wash your potatoes well and piece them a few times with a fork.
- Place potatoes in preheated oven and bake 60 – 80 minutes until fully cooked through. They will feel soft if you squeeze them.
- Remove potatoes from oven and reduce oven temperature to 350 degrees.
- Let the potatoes cool enough to handle. That is at your discretion or use a oven mitt to hold the potato.
- Slice the potatoes into lengthwise halves and then scoop out the flesh, leaving about 1/4 inch of the potato intact with the peel.
- Place the flesh of the potatoes into a bowl and set aside (use later for mashed potatoes or potato fritters)
- Fill the potato skins with the gorgonzola and then top off with pancetta pieces
- Place the potato skins on a prepared baking sheet.
- Bake for about 10 – 15 minutes to melt the cheese.
- Sprinkle with bacon and green onions and serve warm and with sour cream.

These are really freaking good. Occasionally I get a “hankerin'” for something along the lines of good ole american bar food. And I just improvised a little bit, and came up with this!
