Banana Chocolate Chip Breakfast Cookies

- 1 cup oats
- ¾ cup oat flour
- 1 ½ teaspoons baking powder
- ¾ teaspoon ground cinnamon
- ¼ teaspoon salt
- 1 ½ tablespoons coconut oil melted and cooled slightly
- ¼ cup mashed banana
- 1 tsp vanilla extract
- 3 tablespoons pure maple syrup
- 5 tablespoons almond milk
- 2 ½ tablespoons miniature chocolate chips
Preheat your oven to 325°F.
Line a baking sheet with parchment paper.
In a medium sized bowl whisk together the oats, oat flour, baking powder, cinnamon, and salt.
In a separate bowl, whisk together the coconut oil, mashed banana, and vanilla, then stir in the maple syrup and almond milk.
Add the banana mixture into the flour mixture, stirring just until incorporated.
Add the miniature chocolate chips and stir to incorporate.
Let the cookie dough rest for 10 minutes.
Drop 15 rounded scoops of the cookie dough onto the prepared baking sheet.
you can flatten the cookies to your desired thickness using a spoon or spatula.
Bake for 9-11 minutes.
Remove from the oven and allow cookies to cool in the pan for 10 minutes.
Then transfer cookies to a wire rack to cool all the way.
