Banana Chocolate Chip Breakfast Cookies

Ingredients
  

  • 1 cup oats
  • ¾ cup oat flour
  • 1 ½ teaspoons baking powder
  • ¾ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 ½ tablespoons coconut oil melted and cooled slightly
  • ¼ cup mashed banana
  • 1 tsp vanilla extract
  • 3 tablespoons pure maple syrup
  • 5 tablespoons almond milk
  • 2 ½ tablespoons miniature chocolate chips

Instructions
 

  • Preheat your oven to 325°F.
  • Line a baking sheet with parchment paper.
  • In a medium sized bowl whisk together the oats, oat flour, baking powder, cinnamon, and salt.
  • In a separate bowl, whisk together the coconut oil, mashed banana, and vanilla, then stir in the maple syrup and almond milk.
  • Add the banana mixture into the flour mixture, stirring just until incorporated.
  • Add the miniature chocolate chips and stir to incorporate.
  • Let the cookie dough rest for 10 minutes.
  • Drop 15 rounded scoops of the cookie dough onto the prepared baking sheet.
  • you can flatten the cookies to your desired thickness using a spoon or spatula.
  • Bake for 9-11 minutes.
  • Remove from the oven and allow cookies to cool in the pan for 10 minutes.
  • Then transfer cookies to a wire rack to cool all the way.
