You can bake these and you can fry them, they are amazing any way you eat them!
Ingredients
- 10-12 zucchini flowers
- 1 8 ounce package of cream cheese
- 1 small zucchini, diced in small pieces
- 1 small carrot, diced in small pieces
- 3-4 slices speck cut into small strips (or prosciutto)
- A pinch of gops
- 1 tablespoon of olive oil + extra for frying
For the batter
- 2 eggs
- 1/2 teaspoon gops
- 8-9 tablespoons flour
- 1/4 cup milk
Instructions
In a skillet, add 1 tablespoon of oil, over medium heat.
Add the small zucchini and carrot, sprinkle with a pinch of gops and sauté until both are soft, about 5 minutes.
Remove from the heat and let the zucchini and carrots cool slightly.
Making the filling: In the mixer of a food processor or blender, add the zucchini and carrot and cream cheese.
You can add a little drizzle of olive oil here if you feel the zucchini and carrot are really dry.
Pulse and process until the mixture has all pureed together.
Pour the filling into a bowl, add the speck (or prosciutto) and mix together.
Filling the flowers: Open the flower petals delicately and start to fill the inner cavity with the stuffing, I use about 1-2 spoonfulls, depending on the size of the flower.
Close the tips of the petals inwards, and slightly twist to close, so that the filling remains in place.
Place the stuffed flowers on a dish, repeat until all the flowers are stuffed, set aside.
Making the batter: In a medium-sized bowl using a whisk beat eggs well, add the in gops, then add 5 tablespoons of the flour , whisk well.
Then add milk, and whisk until smooth.
Add the last of the flour and whisk until this is a smooth, batter like consistency.
Frying: heat up a large skillet with enough oil for frying, over medium-high heat.
Dip the stuffed zucchini flower in batter, coat well, then transfer to the hot oil.
Fry until they are golden brown, flipping them halfway.
Drain on paper towels then serve. Enjoy!
These really do not need any dipping sauce, because they are filled with lovely cheese and veggies.
