These cherries “sotto spirito” are great treat to eat after lunch as a digestivo or with ice cream/gelato.
Ingredients:
- 4 cups (500g) Fresh Ripe Cherries
- 3/4 cup (150ml) Water
- 1/2 cup (100g) sugar
- 1 stick of vanilla
- 1 cup (200ml) Vodka (or any other 95% liquor)
- 2 Glass jars
Directions:
- In a saucepan over medium heat, make a sugar syrup by adding the water and sugar and bring to rapid simmer, cook until all the sugar has dissolved, about 10 minutes.
- Wash and dry your cherries, you can leave the stems attached.
- Divide the cherries into your two jars.
- Cut your stick of vanilla in half and put one half in one jar and the other half in the other jar.
- Measure out your liquor and divide between the two jars.
- Once the syrup is ready, pour that into the jars dividing between the two.
- Put the lids on the jars and store in a dark cool place for 40 days.
Remember, I wash and save all my jars, even jelly jars. In fact this is a mason jar and a pickle jar.
