INGREDIENTS
- 4 apples (your favorite variety)
- 2 cups sugar
- 1/2 cup olive oil
- 2 eggs
- 2 teaspoons vanilla extract
- 1 cup chopped pecans or walnuts
- 2 cups cherries, deseeded
- 3 cups all purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1 tablespoon cinnamon
- 1/2 teaspoon nutmeg
DIRECTIONS
- Preheat your oven to 350F.
- Line 2 loaf pans with parchment paper, set aside.
- Peel your apples and then using a box grater over a large mixing bowl, grate the apples and discard the cores.
- Pour the sugar on top of the apples and mix together, leave this on the counter for about 15 minutes, you want the sugar to absorb into all of the liquid and dissolve.
- Once that is ready, add the oil, eggs, vanilla, nuts and cherries, then stir.
- Sift in your flour, baking powder and soda, salt, cinnamon and nutmeg.
- Stir until incorporated well.
- Divide the batter by pouring half of the batter in one loaf pan and then the rest in the other loaf pan.
- Smooth out the batter with a rubber spatula.
- Place in the oven and bake for 50-60 minutes. Test with a toothpick to make sure it is done.
- Pick the bread up out of the loaf pans by the parchment paper, and transfer to a wire rack to cool completely
This is about the same as the other cake recipe.
I got to thinking after I picked all those cherries, I should do something with them, and I love plumcakes/loaf breads, so I gifted the second loaf of Apple Raisin bread to my neighbors. They were grateful when I saw them and said they ate the whole thing for breakfast! 🙂
I originally made this with only 1 cup of cherries, but it was not enough, 1 extra cup should do the trick, so I said to add 2 cups of cherries in the recipe above.
