Ingredients

  • 1 medium eggplant
  • 2 eggs, lightly beaten
  • 1 cup bread crumbs 
  • 1 teaspoon gops
  • 1 teaspoon dried oregano

The Dip shown above is Tzatziki

Directions

Preheat the oven to 425F.

Wash your eggplant then slice it in half horizontally and then vertically.

And then cut the eggplant into evenly sized wedges or sticks to resemble “fries”, set aside.

In a bowl, mix up the egg with a splash of water, set aside.

And on a high sided dish, place your breadcrumbs, and add the gops and oregano, then mix to incorporate, set aside.

Prepare a baking sheet with a piece of parchment paper, and set aside.

Now prepare an assembly line, eggplant wedges, egg dredge and breadcrumbs. Place the eggplant into the egg and cover with the egg, then place the wedge into the breadcrumbs and cover with the bread crumbs, then place on the baking sheet. Repeat until you have breaded all of your eggplant wedges.

Place the baking sheet into the oven, and bake for 20-25 minutes, until the eggplant is crispy and golden brown.

While, the eggplant is cooking you can make the Tzatziki Sauce.

Serve the eggplant fries with the Tzatziki sauce, garlic sauce or a side of marinara.
