Ingredients:
1 can of cece beans, drained and rinsed
1 red or yellow bell pepper, chopped
1 clove of garlic, minced
1 shallot, sliced
1 zucchini sliced
2 cups Farro (cooked to the directions on the box)
Olive oil
1 pinch of crushed red pepper
1 tsp Gops
2 tbsp Sicilian Spice
Fresh Lemon Thyme to top
Directions:
In a large skillet, heat up about 2 tbsp of olive oil on medium-high heat, Add the garlic and sauté for about a minute, then add the shallots and sauté, until soft.
Add your pinch of crushed red pepper and stir to mix well.
Add the chopped bell pepper and sauté about 2-3 minutes, then add the Zucchini.
Sprinkle on the gops, sicilian spice and add a few drizzles more of olive oil and sauté everything together for about 5 minutes, stirring often.
Add your cece (chickpeas) and turn the heat up to high and sauté for a few minutes before adding the farro.
Once you add the farro, mix to combine it all together.
Plate the dish, and sprinkle fresh lemon thyme on top.
