Ingredients:
- 2 cups Old Fashioned Oats
- 1 ripe banana
- 1 egg
- 1 cup milk
- 1 tsp vanilla
- 1 tsp baking powder
- 1/4 tsp salt
- 1 tsp cinnamon
INSTRUCTIONS
- In a high speed blender, (I used my ninja) grind oats until flour like consistency, which makes oat flour.
- Add the rest of the ingredients and blend until well combined. I used the Food Puree setting.
- Let batter rest and thicken up, while you prepare your skillet.
- Place a skillet on medium heat and melt some butter in it. If you have a pancake griddle you can use this.
- Pour some of the batter into your skillet or griddle.
- Flip over once bubbles start forming and bottom is a golden brown Color.
- Serve with Syrup or sliced bananas and some walnuts, I liked to mix greek yogurt and jam together.
Today is a overcast and cloudy day, it looks like it wants to rain… Today after I got up and finished my morning yoga ritual. I decided that instead of eating a lunch I was going to have breakfast for lunch. So I am cleaning out the cabinets since we are still in quarantine. and I was thinking, I really like the banana and egg pancakes; But, it’s lacking consistency.
So That’s when I decided to add some flour and milk and make real pancakes with added banana and egg for protein. Just between you and me, I hate buttermilk pancakes…
