Fresh Avocado and cece salad
2 avocadoes
15-20 cherry tomatoes
1 can of cece beans
Juice of 1 lime
1 tbsp Olive Oil
a handful of fresh parsley
salt and pepper
Dice up the avocadoes and quarter the cherry tomatoes and put into a bowl.
If you are using dried cece beans, you need to soak them overnight and then rinse thoroughly. If you are using canned cece beans, rinse thoroughly and then add the cece into the mix.
Add the juice of the 1 lime and Olive oil.
mince up your fresh parsley, and add that to the mix as well as the salt and pepper to taste. Mix well and serve cold, with tortilla chips or without. 🙂
