Sweet Tea… in Italia!

So,we are all about eating Healthy and Clean.. and i’m a firm believer in lots of fruits and vegetables.. but, I still dream about food day and night and love cookies and cakes.. and I’m always looking for ways to make it healthy and retain flavor…  It is October and I figured what a better way to kick off the Month but, with none other than Pumpkin Junk food.   So this is what we found…

This is adapted from his Paleo Ingredient list.. Side note about the Paleo diet.. I randomly was all about that the other day and got to looking into it…  I got to the part where they said you cannot have dairy…. I would T-Totally Die without jogurt and cheese. In fact, a cheese aficionado friend and I call each other the cheese whores hahah.

So.. here is the recipe we adapted from bigman (whomever he is)

Ingredients
2 medium mashed bananas
1/4 cup canned pumpkin
1/2 cup smooth almond butter
1 Tbsp equal parts of Nutmeg, allspice, cloves, cinnamon and ginger to add up to 1 TBSP. (I did not measure at the time so I eyeballed it and made the 1 tbsp)
I opted not to add sweetener..  If I did.. I probably would have added a tbsp of Honey.

Preheated the oven to 350 degrees
Sprayed a small roasting pan the 6×4 size with olive oil.

In a large mixing bowl, add the banana, pumpkin, nut butter, spices and mixed very well.

Pour the concoction into the greased pan and baked for around 20 minutes and it passed the toothpick test.
 Remove from the oven and allow to cool completely before slicing into pieces.
I opted to make 6 pieces.. bringing the grand total to 170 calories per slice.

Then plated it for breakfast with guess what……………. Yogurt, apples sprinkled with cinnamon and some grapes..  all which equaled a happy me.. 🙂
