Fall is here semi-officiall here.. I have had a busy busy day so far, I worked at the hospital, Came home fed horses, cows and the puppies.. cleaned stalls, took a shower and created a new dish. In between the Morgue and my house.. I went went grocery shopping, where I found all the “manager’s specials”. So I purchased copious amounts of pork roasts today. I also bought Lamb and Ground Turkey (don’t ask.. it’s great).
Loaded up on vegetables and a whole organic chicken so I can make chicken bone broth. I did get a funny look from the butcher when I asked him about beef bones and if I could buy them for him… He was pretty Leary of me until I explained what I was doing, then he told me he was slaughtering cows this weekend and would save me the bones! :::::score for me::::::
So Pork makes me think of Apples.. I love Apples and I also love Rosemary.. and being a herbalist I love my mortar and pestle.. So I decided to make a paste… and here is what I have created for dinner tonight…
Ingredients
6 large Carrots, peeled and roughly cut up
2 large Sweet Potatoes or Yams (peeled and chopped)
2 Tbsp Extra Virgin Olive Oil
1 Tbsp Fresh Rosemary chopped up
1 Tbsp Fresh Thyme
1 large gold rush apple halved and quartered
6 Cloves of garlic minced
1 tsp each, salt and pepper
1 tsp ground ginger
approximately 2 cups of water
Directions:
Peel and Chop the carrots, sweet potatoes and apple, Then arrange them in your slow cooker. Pour enough water over the vegetables and fruit to barely cover them.
Get out a Mortar and Pestle and add the Olive Oil, then herbs and garlic. Grind it up into a paste and spread on top of the pork.
Place this in the crockpot for 6-8 hours on Low…
Fix, forget, go to work and come home and have a wonderful meal.
