Two nights ago I thought I would just call in a to-go order at the local fusion restaurant. They know me pretty well in there, so I went and picked up my two orders of Pho. They make a bone broth that they cook for over 24 hours that goes into this soup, and I love it.
So I get home, and I see that there is no noodles or vegetables or meat.. I was like whaaaat? so we sauteed up some broccoli and kale and had it with the broth. So; The next day.. I got to thinking about the fact that I am working late (until 7pm) and what in the world could I put in the crock pot?
And the idea just hit me, I’ll take the bone broth and make a stew. So I put this recipe together and decided to write it all down, that way I could transcribe it here and go from there. And here we are..
Ingredients
2 lbs Beef Chuck Roast
1 1/2 qts Beef Bone Broth
1/2 cup uncooked whole wheat Orzo
6 Carrots (peeled and quartered)
6 small sweet peppers sliced (or a bell pepper sliced)
3 big handfuls of chopped Kale
1 chopped clove of garlic (or 2 if you like garlic)
1 can diced tomatoes
Salt and pepper to taste
1 Tbsp Sicilian Spice
3 Pepperoncini Peppers
Put all of this in a crockpot/slow cooker and let it go for 6-8 hours.
Now, I will get into bone broths soon. I am researching them very intensely as of late… and I am about to make on this weekend… I want to try it before I go trying to write on the subject.
