Bulgur Pilaf with Chickpeas and Tomatoes

This is a simple, tasty and nutritious pilaf type dish made with bulgur, tomatoes, red peppers and chickpeas.

Ingredients
  

  • 2 tablespoons extra virgin olive oil
  • 1 red onion finely chopped
  • 1 red pepper diced
  • 2 cloves garlic minced
  • 1 teaspoon ground cumin
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon dried chili flakes
  • 1 tablespoon tomato paste
  • 1 cup bulgur
  • 14 oz can chopped tomatoes
  • ¾ cup vegetable or chicken stock
  • 1 cup canned chickpeas drained and rinsed
  • a pinch fo gops
  • qb chopped fresh parsley
  • qb finely chopped fresh mint

Method
 

  1. In a saucepan or skillet with a cover, over medium heat, add the oil.
  2. Add the onion and red pepper and saute until the onion is soft.
  3. Add the garlic, cumin, cinnamon, chili flakes and tomato paste and cook for a few minutes.
  4. Add the bulgur and stir to coat for 1 minute.
  5. Add in the tomatoes, stock, chickpeas, Gops, stir to combine.
  6. Turn the heat to high and bring to a boil.
  7. Cover with the lid, reduce the heat to low, and cook for 15 minutes.
  8. Remove the pan and let stand, with the lid on, for about 5 minutes.
  9. Stir in the parsley and mint.
