Mediterranean Chickpea Skillet
This recipe is delicious, healthy and super easy. Make this for a quick weeknight dinner and you can use whatever vegetables you have in your fridge! the more the merrier!
Ingredients
- 1 can chickpeas drained & rinsed
- 4 medium tomatoes chopped
- 1 small zucchini chopped
- 1 small shallot chopped
- 1 carrot chopped
- 1 tsp chili powder
- 2 garlic cloves minced
- 1 tbsp olive oil
- 1 cup couscous dry
- 1-1/2 cups chicken or vegetable broth
- pinch of gops
Instructions
Instructions for Couscous:
- In a medium saucepan, bring the broth to a boil. Stir in the couscous, cover tightly with a lid, and remove from heat. Let the couscous steam for 5 minutes. Use a fork to fluff the couscous and break up any clumps. set aside.
Instructions for the skillet:
- In a large skillet add olive oil and shallots, set on medium-high heat and simmer for 5 minutes.
- Add the garlic, zucchini, tomatoes, carrot and gops to taste, continue to simmer.
- Once the vegetables are soft, add chickpeas and stir, let simmer for 5 min.
- Add the couscous and toss to combine.
- Serve warm.
