Mediterranean Chickpea Skillet

This recipe is delicious, healthy and super easy. Make this for a quick weeknight dinner and you can use whatever vegetables you have in your fridge! the more the merrier!

Ingredients
  

  • 1 can chickpeas drained & rinsed
  • 4 medium tomatoes chopped
  • 1 small zucchini chopped
  • 1 small shallot chopped
  • 1 carrot chopped
  • 1 tsp chili powder
  • 2 garlic cloves minced
  • 1 tbsp olive oil
  • 1 cup couscous dry
  • 1-1/2 cups chicken or vegetable broth
  • pinch of gops

Method
 

Instructions for Couscous:
  1. In a medium saucepan, bring the broth to a boil. Stir in the couscous, cover tightly with a lid, and remove from heat. Let the couscous steam for 5 minutes. Use a fork to fluff the couscous and break up any clumps. set aside.
Instructions for the skillet:
  1. In a large skillet add olive oil and shallots, set on medium-high heat and simmer for 5 minutes.
  2. Add the garlic, zucchini, tomatoes, carrot and gops to taste, continue to simmer.
  3. Once the vegetables are soft, add chickpeas and stir, let simmer for 5 min.
  4. Add the couscous and toss to combine.
  5. Serve warm.
