Rosemary Roasted Pork Loin

Ingredients
  

  • 2 teaspoons dried rosemary
  • 2 teaspoons dry mustard
  • 2 teaspoon house seasoning
  • 1 teaspoon ground ginger
  • 2 tablespoons olive oil
  • 6 cloves garlic minced
  • 3 pound boneless pork loin room temperature
  • 1-2 granny smith apples sliced

Method
 

  1. Preheat oven to 350F.
  2. In a mortar and pestle crush together rosemary, mustard, house seasoning and ginger.
  3. Add the olive oil and make a paste, set aside.
  4. In a roasting pan, place the sliced apples down.
  5. Then place the roast on top of the apples.
  6. Rub the roast with all of the herb paste mixture.
  7. Bake for 1.5 hours and remove from the oven.
  8. Let stand for 15 minutes before slicing.

Notes

Let the pork roast stand outside the fridge for about 30-45 minutes.

I love this roast, it is great for anytime of the year, it is packed with flavor and oh so good!
