Rosemary Roasted Pork Loin

Ingredients
  

  • 2 teaspoons dried rosemary
  • 2 teaspoons dry mustard
  • 2 teaspoon house seasoning
  • 1 teaspoon ground ginger
  • 2 tablespoons olive oil
  • 6 cloves garlic minced
  • 3 pound boneless pork loin room temperature
  • 1-2 granny smith apples sliced

Instructions
 

  • Preheat oven to 350F.
  • In a mortar and pestle crush together rosemary, mustard, house seasoning and ginger.
  • Add the olive oil and make a paste, set aside.
  • In a roasting pan, place the sliced apples down.
  • Then place the roast on top of the apples.
  • Rub the roast with all of the herb paste mixture.
  • Bake for 1.5 hours and remove from the oven.
  • Let stand for 15 minutes before slicing.

Notes

Let the pork roast stand outside the fridge for about 30-45 minutes.

I love this roast, it is great for anytime of the year, it is packed with flavor and oh so good!
