Pistacchio Mousse

This was an idea that came into life last night!

Ingredients
  

  • ½ cup heavy whipping cream
  • 4 oz cream cheese softened
  • 1/4 cup pistacchio butter no sugar added
  • ½ tsp vanilla extract

Method
 

  1. In a stand mixer bowl, whip the cream until it holds stiff peaks. Set aside.
  2. In another mixing bowl, beat together the cream cheese and pistacchio butter until smooth and creamy.
  3. Add the vanilla and beat until smooth.*
  4. Gently fold in the whipped cream until no streaks remain.
  5. Spoon in little dessert glasses.

Notes

1/4 cup sweetener if you need your dessert super sweet. Generally I leave it out. *If your mixture is overly thick, you can add add about 2 tbsp heavy cream to lighten it up.
 
You can use pistacchio creme, but it has a lot of sugar in it.  But sometimes you just need a fix!
