Pesto alla Genovese

Ingredients
  

  • 2-3 cups of fresh basil leaves
  • 2/3 cup Fresh grated Pecorino romano
  • 1/2 cup Fresh Grated Parmesan
  • 2 cloves of garlic
  • 1 1/4 cup olive oil good extra virgin
  • 1/2 cup Pignoli seeds
  • a pinch of salt

Method
 

  1. wash your basil well in cold water, then dry.
  2. In your food processor add half of the basil leaves, pignoli seeds and olive oil, Pulse for a few seconds. Then add the rest of the basil leaves, garlic, and both cheeses.
  3. pulse for 10-15 seconds, and keep pulsing until everything is emulsified, adding some olive oil if needed.
  4. Taste the pesto and add salt.
  5. this is now ready to add to your favorite pasta, I like to have pesto with trofie.
