Mediterranean Pasta Salad

Ingredients
  

  • 3 cups pasta cooked
  • 6 cups baby spinach or arugula
  • 1 cup grape tomatoes halved
  • 15 ounces cece drained
  • 1/2 cup olives kalamata or black halved or sliced
  • 1/2 cup apple cider vinegar with the mother
  • 1/2 cup olive oil

Instructions
 

  • In a large mixing bowl, add the spinach or arugula, tomatoes, olives and cece.
  • Top with a big pinch of gops and mix well to combine.
  • In a small bowl combine olive oil and apple cider vinegar and whisk well to combine.
  • Add the pasta to the salad mixture and add the olive oil and vinegar mixture.
  • Toss to coat.
  • Serve cool to cold.

This is by far one of my favorite summer dishes.
