Mediterranean Pasta Salad

Ingredients
  

  • 3 cups pasta cooked
  • 6 cups baby spinach or arugula
  • 1 cup grape tomatoes halved
  • 15 ounces cece drained
  • 1/2 cup olives kalamata or black halved or sliced
  • 1/2 cup apple cider vinegar with the mother
  • 1/2 cup olive oil

Method
 

  1. In a large mixing bowl, add the spinach or arugula, tomatoes, olives and cece.
  2. Top with a big pinch of gops and mix well to combine.
  3. In a small bowl combine olive oil and apple cider vinegar and whisk well to combine.
  4. Add the pasta to the salad mixture and add the olive oil and vinegar mixture.
  5. Toss to coat.
  6. Serve cool to cold.

This is by far one of my favorite summer dishes.
