Method
- In a large mixing bowl, add the spinach or arugula, tomatoes, olives and cece.
- Top with a big pinch of gops and mix well to combine.
- In a small bowl combine olive oil and apple cider vinegar and whisk well to combine.
- Add the pasta to the salad mixture and add the olive oil and vinegar mixture.
- Toss to coat.
- Serve cool to cold.
This is by far one of my favorite summer dishes.
