Ingredients

  • 2 cups all-purpose flour 
  • 1 teaspoon baking powder 
  • 1/4 teaspoon baking soda 
  • 1/2 teaspoon salt 
  • 1/3 cup sugar 
  • 8 tablespoons unsalted butter, frozen 
  • 1/2 cup plain yogurt
  • 2 tablespoons milk 
  • 1 heaping cup diced fresh strawberries 
  • 1 egg

For the Glaze

  • 1 cup powdered sugar
  • 1 tablespoon milk
  • 1 teaspoon lemon juice

Directions

  1. Wash and pat dry then dice up your strawberries.
  2. Preheat oven to 400F.
  3. Line a baking sheet with parchment paper. 
  4. In a small bowl, whisk together the yogurt, egg and milk.
  5. In a separate mixing bowl, whisk together the flour, baking powder and soda, salt and sugar.
  6. In a medium bowl, whisk together all of the dry ingredients.
    Remove your butter from the freezer and using a cheese grater, grate the butter into the flower mixture. toss in the diced strawberries.
  7. Now add the yogurt mixture into your flour mixture and mix with a rubber spatula or wooden spoon.
  8. Be careful not to crush the strawberries too much. 
  9. This dough is odd, like most scone dough, it is crumbly and then it all comes together and it is dry.
  10. Once the dough is almost mixed all the way, you can use  your hands to make it all come together in a ball.
  11. Move the dough from the bowl to a floured surface and press it out until it is even thickness and about a 8-9inch circle. 
  12. Use a knife and cut into triangles. I made 8, and they were big, you can easily cut into 10 or 12.
  13. You can also use a biscuit cutter and make them round…
  14. Transfer the scones onto the baking sheet and place in the oven for 15-20 minutes.
  15. You want them golden brown looking.
  16. Once they are done, take them out of the oven and let them cool for about 15 minutes then prepare the glaze.
  17. In a small bowl, using a whisk, add the lemon juice, milk and powdered sugar, whisk until it all comes together and forms your glaze. 
  18. Drizzle the glaze over each scone and prepare to eat two not just one..

I have been thinking about scotland a lot these past few days. And I got to thinking about the food that I ate while I was there, and I got to thinking about scones, I did love those little scrumptious things.

So Today, I decided to give it a go. The strawberries are semi in season here.

Yeah, I didn’t know that either… he even has a wine called Roxanne red and one called message in a bottle! I’m going to need to find me some of that… and try it.

  1. Can you sub the yogurt for anything else if you have none on hand? 🙂 These look sooo yummy and I just picked strawberries! But no yogurt.

    1. Girl never fear: For 1 cup of plain yogurt you can substitute a few things:
      1 cup buttermilk
      1 cup sour cream
      1 cup cottage cheese, blended until smooth in a food processor

      I haven’t tried the substitution myself, but they say you can sub all of these items for yogurt. sour cream would probably be the easiest but, If you don’t have sour cream make buttermilk, out of 1 cup of milk and 1 tablespoon of white wine vinegar. Let the milk sit with the vinegar until it starts to curdle.

      1. I used Sour cream and they are sooo yummy!!! I Not to sweet and I may have eaten more than 1 already 🙈😂
