Zucchini All’Arrabbiata

Everyone needs a zoodle maker in their lives, I call this machine a “zoodler”. They are super cheap at the store and practically everywhere. Zucchini is one of my favorite vegetables, second to eggplant. I love eating zucchini noodles with everything and all kinds of pasta sauces. This is a play on the sauce “all’arrabbiata” we eat here a lot.

Ingredients

  • 3-4 zucchini, washed and the ends cut off.
  • 2 garlic cloves, minced
  • 2 shallots, chopped
  • 2 tomatoes, diced
  • A few pinches of gops
  • A handful of crushed red pepper
  • Olive Oil

Directions

Cut one zucchini in half long wise and thinly slice, save the others for the noodles.

In a large skillet, heat some olive oil over medium-high heat.

Add the garlic and sauté for a minute, then add the shallots and sauté until soft.

Add a handful of red pepper (or more) and stir to mix.

Add the sliced zucchini and turn the heat down to medium.

Sprinkle with a few pinches of gops and stir occasionally.

While the zucchini is sautéing, cut up your tomatoes and set them aside.

In a large bowl, using your zoodle maker, make zucchini noodles out of the other 3 zucchini, and set them aside. 

When the zucchini is soft, add the tomatoes and a little bit more olive oil to the pan. 

Once the tomatoes are soft and cooked, add the zoodles to the skillet.

Add another big drizzle of olive oil and turn the heat up to medium-high.

Sauté all of this together until the zoodles are soft. 

Plate and Enjoy.
