I am still on the soup kick!
Last night, I put together a Italian Fish Soup…
I couldn’t find fennel in the supermarket, so I used fennel seeds lol.
Ingredients
2 cans Diced Tomatoes
1 tbsp Fennel seeds
2 tbsp Sicilian Spice
1/2 tsp Sea Salt
3 Carrots Chopped
1 Stalk of Celery Chopped
2 Russet Potatoes Chopped
3 Cloves of Garlic Minced
1 1/2 cup of Beef Broth
3 big Cod Filets (or some meaty whitefish)
Directions:
Put all of the ingredients except for the Fish into a crockpot and set on low for 6-8 Hours.
Add the Cod after it has finished cooking and leave them in the crockpot for about 10-15 minutes until they are cooked.
Serve with Parmesan cheese.
