Ingredients:
1 lbs Chicken Breasts, cut into chunks
3 Cups Chicken Broth
1 Sweet Onion Chopped
8 or so Ounces of Chanterelle Mushrooms (or your favorite mushoom)
2 Tbsp Minced Ginger
1 Can of Full Fat Coconut Milk
1 Cup Cooked Brown Rice
1 Red Bell Pepper, thinly Sliced
1-2 Tbsp Sriracha (omit this if you don’t like it hot and spicy)
1 Tsp Salt
1 Tsp Pepper
4 tbsp Cilatro Chopped
Directions:
First off you want to Cut the chicken breasts into 1 inch chunks… No rhyme or reason behind this… just 1 inch chunks sounded good to me…
Chop up the onions and Mince the ginger…. Mental Note, Fresh ginger will make you cry.. as if the onions didn’t bring tears to my eyes!
I’m about working smart in the kitchen when I’m making a dish for after work.. so I used the Rice cooker (I totally stole it from my parents… shhhhhh!)
Put 1 cup of brown rice with 1.5 cups of water with a dash of salt in a rice cooker.. If you do not have one of these.. I recommend you get one..
Or you can prepare your rice to manufactures statements.
Back to the crockpot.. Combine the Chicken, broth, onions, mushrooms, ginger, salt and pepper and set the crockpot to low then go to work/shopping/read/watch tv/workout/do some farm work, Moral of the story is do something for at least 6 hours waiting on this to cook….

When you come back home after work (My real job), as I did, I Sliced up the red bell pepper, added that to the crockpot, then measured out a cup of rice out of the rice cooker, stirred that into the crockpot and then dumped the coconut milk in there.. Covered it back up and let it cook for another 15 minutes…. I however, went to change into comfortable clothes..
Then came back and stirred in 2 tbsp of Sriracha…. I like this crap spicy… and so I put more after I sat down with my bowl, but this gave it good heat… You could totally leave the Sriracha out.. but, what is thai food without heat?
This soup was awesome.. it only has about 158 calories per serving, so that means eat up..
