Sweet Tea… in Italia!

Again, I’m still rolling the No Carbs and I’m headed to NYC after I leave my office… which I wish I was already on the road…
But, This morning I made another one of the lovely Brianna Thomas’s Muffin in a bowl recipes!

Ingredients
1 egg
 1 T salted butter, softened
 2 T plain pumpkin puree
 ¼ cup water
 4 T Briana’s Baking Mix *or* 3 T oat fiber and 1 T golden flaxmeal
 ½ tsp. baking powder
 ½ tsp. pumpkin pie spice
 Pinch salt
 2 doonks THM Pure Stevia Extract Powder (a doonk is 1/32 tsp.), or more, to taste
 Dash of vanilla extract

– Suggested toppings: almond milk, Truvia, whipped cream, fat free Reddi-Whip, butter, cream cheese, Pumpkin Spice Syrup, sugar free maple syrup, pecans

INSTRUCTIONS

– Mix together all the ingredients (except for topping ingredients) and microwave for 1½ – 2 minutes or until the top is not quite dry in the middle (adjust to your liking). Top with your choice of toppings (see suggestions above).
– If you don’t intend to top this with additional sweetener or a sweet syrup, I recommend adding a little more sweetener to the batter itself.
– Alternately this could be baked in an oven-safe ramekin at 350 degrees F until the top is not quite dry in the middle.
