HOLY CRAP BATMAN.. I stumbled upon this while I was doing my morning rounds around the ranch.  I had just finished dumping some feed to the golden girls pasture (the old mares) and I hoped back into my mini truck and put it in first took off and slammed on the brakes…..  I caught the hugest mushroom out of the corner of my eye….  and up to this.. I was having a bad morning…
I hoped out of the truck and ran over to it..

Can you see how beautiful this thing is??  It was huge… and It has been drizzly and crappy the past few days and it rained last night and what great conditions for mushrooms… but, OMG…
So I cut this one away from the tree… and took it back to the house with me..
Once I got it back to the house, I suspected it was a huge oyster mushroom, but just to be sure I wanted to make sure it wasn’t a Jack O Lantern playing tricks…  

Look at the size of this thing on my counter… wow.. just wow…
I broke of a piece and smelled it real good, and it smells like shellfish, it literally smells like seafood.. then I grabbed out my Audubon book of Mushrooms, weighed out the differences of the two, and decided it was edible…
I don’t think I have ever written about Mycology here, but I love musrhooms and wild crafting of anything.. I have a fungal Pharmacy book that is like my bible..

Let’s talk about this mushroom real quick.
Pleurotus is from  the Greek word, Pleur, meaning “formed laterally”. and Pulmonarius is from Plumo meaning “lung”.    when you rip this apart it has the texture of a lung, and it is spongy like a normal healthy lung (pathology geek).
So medicinal uses of this funghi. They contain eight essential amino acids.  Thiamin; riboflavin; folic acid; sterols, including D2 and D4; gamma ergosterol; lovastatin; pigments; carotenoids; bioflavonoid complex; fatty acids; various polyhydroxysteroids;mevinolin;tricholomic acid; trihydroxy-ketones; tetrahydroxy-ketones; tetraol; epidioxide; cerevisterol and triol.  High in Copper and Zinc, 12 million grams of Vitamin C, also High levels of Iron and potassium and Naicin.
Alcohol extracts of this possess a high level of antioxidant activity. and some of the fruiting bodies contain lovastatin, the 3-hydroxy-3-methylglutaryl-coenzyme a reductase inhibitor.
Very Antibiotic towards micrococcus luteus, staphylococcus aureus and bacillus mycoides.

This was a Huge find.. So Immediately.. I have eaten a bit of this in a omelette.. Tonight I will make a alcohol extraction of some of it.. and maybe dry some and make a powder…. we shall see what the inner voice tells me to do with it 🙂

Here is what I had for lunch..

I Just sauteed this up with a whole clove of garlic, salt, pepper and red pepper. Added 1 scrambled egg with some fresh grated Parmesan cheese. topped with some green onions… 🙂
