The infamous day is upon us… And here I sit scrambling around for what to make.  I hate Christmas.. and let me just say I don’t hate what Christmas Stands for, I hate the commercialization that has come with it.. with the buying of gifts for people you don’t talk to everyday, and you only feel obligated and the drama, and the uncomfortable situations and the fake smiles for the gift that someone gave you, that you don’t like….  I wish people just just bring me bread and cookies along with the recipes… or candies….  heart felt gifts are what I would rather.. not some stupid nick knack that will collect dust and I have to dust around…. So there is my bahumbug for the day…
Moving away from that I come to think about Christmas food and the essence of it… I think white and red.. Cream cheese and Cranberries…. and I got to looking around for some ideas.. and found one from Julie’s eats and treats.  I played around with some of the ingredients and this is what I made today…  more crap is on the way, we are about to get started with brownies.. and our fish dish for Christmas Eve Dinner…
Ingredients:

1 Cup Softened Butter
1 8oz package of Neufchâtel cheese, Softened
1 Cup Stevia
1 1/2 Tsp Vanilla
4 Eggs
2 Cups All Purpose Flour
1 1/2 Tsp Baking Powder
1/2 Tsp Salt
2 Cups Fresh Cranberries
1/2 Cup Course Chopped Pecans

Directions:
Preheat the oven to 350 degrees.
In a kitchen aid or stand mixer cream together, Butter, Cream Cheese, Stevia and Vanilla.
Add the eggs one at a time, and mixing well in between adding the eggs.
In a separate bowl, mix together, Flour, Baking Powder, and Salt.
Slowly mix the dry ingredients with the wet and combine well.
Fold in the cranberries and nuts.
Grease 2, 9″ x 5″ Loaf pans and Pour the batter evenly into both.
Bake for about 45-60 minutes until golden brown and it passes the toothpick test.
