Ingredients
2 – 8 oz New York Strip Steaks
3/4 cup Heavy Cream
3/4 cup Milk
1/3 cup grated Pecorino Romano cheese
4 ounces Gorgonzola cheese
Salt and Pepper to Taste.
Directions:
Pour the creams into a sauce pot. Heat the milk and cream on medium-high heat. Reduce this down to about half of what you started with..
While That is on the stove, heat your oven up to broil.
I like my steaks Rare… pretty damn rare… so.. I put the steaks on the top rack about 2″ from the top and covered both sides with salt and pepper, then patted a few pats of butter on the side I was going to broil and put those steaks in there.
and Let them cook for 3 minutes on one side.. I flipped them and 3 more on the other side ( and no I didn’t butter the other side).
Then I took those out of the broiler and plated them, then finished the gorgonzola sauce. I added the grated cheese and the gorgonzola to the milk reduction and then salt and pepper.. and let that all incorporate. Then poured it over the steak.
Freaking amazing….. very good… Not quite the taste of the stuff down the road.. but, pretty fantastic 🙂
I served this will a bunch of roasted green veggies..
