Last Night, Some friends of ours came to visit.  Actually the ranch is halfway to my friends Mother’s house. So her and her husband stayed the night…  She gave me some nutella as a hostess gift along with some other goodies.. (she knows me well)  and We opened up a bottle of wine and took our party to the bar and had a great night…
So I got to thinking about what else to make and The Nutella was weighing heavy on my mind…. So I remembered seeing a recipe for Nutella Cookies after Elena told me about them… So Here it is….  It is in Italian first, and I translated to English at the bottom..

Ingredients:
180 g di Nutella

150-160 g di farina
1 uovo

Directions:

Le dosi di farina dipendono dalla dimensione dell’uovo: se è medio-piccolo, ti consiglio di utilizzare 150 g di farina, se invece è piuttosto grande, allora utilizzane 160 g.

La preparazione è davvero semplice: metti in una ciotola l’uovo, la farina e la Nutella, quindi impasta il tutto prima con una forchetta e poi con le mani, fino ad ottenere un panetto di pasta liscio e omogeneo.

Ricava dal panetto circa 22 palline del peso di circa 18-20 grammi ciascuna, quindi disponile su di una placca foderata con carta da forno e schiacciale leggermente con il palmo della mano.

Fai cuocere i biscottini in forno preriscaldato in modalità statica a 180 °C per circa 8 minuti oppure a 170 °C per 10 minuti, quindi sfornali e lasciali raffreddare prima di servirli.

Ingredients:
180 g of Nutella
150-160 g of Flour*
1 egg
Directions:
Preheat the oven to 350 degrees.
The amount of flour depends on the size of the egg: if it is medium-small, it is suggested you to use 150 g of flour, if the egg is rather large, then use 160 g.
Put the egg, flour and Nutella in a bowl, then knead it together with a fork and then with your hands, until you get a smooth combined dough.
This should make about 22 balls of dough of about 18-20 grams each, then place them on a plate lined with parchment paper and press them lightly with the palm of the hand.
Bake in the oven for about 8 minutes then take them out and let them cool before serving.
* I  have been trying to stay low carb lately.. So I used a mixture of Flax Meal, Coconut Flour and Almond flour to make up the flour….
