So, this cold snap in the weather just makes me Über hungry.. and hungry for soups… I tend to eat a lot of soups in general.. But I may go a bit overboard with them during the fall/winter.
Today, I was staring at my lemon tree.. and wondering what to make for dinner.. and the mood hit me for lemon… so I went on a roll like butter baby..
Lemon Chicken With Kale and Orzo Soup
1 lb boneless , skinless chicken tenderloins
Himalayan Salt and ground black pepper
3 large chopped carrots
1 small sweet onion chopped
5 cloves garlic , sliced
7 cups chicken broth
2 tbsp Sicilian spice
1 cup (5.8 oz) dried orzo pasta
1 Locatelli Pecorino Romano Heel/Rind
1 1/2 tsp lemon zest
3 large lemons juiced
5 cups fresh Kale, roughly chopped
Place all these ingredients in the crockpot and let it go on low for 8 hours.
This was super good, It was not too lemony… but, Not exactly lemony for my tastes.. I would put about 5 lemons next time to get more of the lemon flavor.. But, other than that it was really good … I also enjoyed this with a nice Guiness…

well until I got student loans and a student life and found the wonders of PBR… People always tell me it sucks and I explain that it has a blue ribbon for a reason.. I think if you start out drinking PBR, it’s good. However; if you drink anything else before PBR, PBR is REALLY bad..
This past weekend, I was reminiscing with an old PBR buddy of mine. Her and I used to get into all kinds of shenanigans together.. And yes I love that word, I believe I use it a lot. While I was right next to Savannah, I ran down to visit her.. We haven’t seen each other in about 9 years… We picked right back up where we left off 🙂
