I don’t like sweet potatoes with marshmallows, mainly because every time I try to bake this said dish…. A fire breaks out and it’s pandemonium in the kitchen.
And I’m not into the mashed sweet potato casserole with all the brown sugar on top….
So I went on the search for something different…
and I came across Candied Sweet Potatoes!
This was super easy as well. we also made this into 9lbs of sweet potatoes 🙂 so we tripled this recipe.
Ingredients
2 pounds of sweet potatoes, peeled and sliced into 1/4 slices
1 Cup of Orange Juice (I used Simply orange)
1/3 cup of Maple Syrup
6 tbsp unsalted butter
1/2 tsp Salt
1/2 tsp Cinnamon
3 tbsp Brown Sugar
1/2 cup of chopped pecans
Preheat the oven to 350. In a baking dish or casserole dish (whichever you need to use) arrange the slices of sweet potatoes so they are overlapping each other.
I cut up the butter into slices and put it over the top of the sweet potatoes.. (I figured it would melt as the oven heated it and it would slowly coat the sweet potatoes….)
In a Separate bowl, I mixed the orange juice and maple syrup with a whisk. and poured that all over the sweet potatoes to evenly cover them.
I covered my pan with tinfoil and baked for about 30 minutes.
While that was cooking, I chopped the pecans up into pieces and added the brown sugar and cinnamon and mixed that all up.
Then I removed the foil and checked the potatoes to make sure they were getting fork tender.
Added the pecan toping to the top of the sweet potatoes. And baked uncovered for another 30-40 minutes.
This was absolutely my favorite way to have the sweet potatoes.. they were citrusy and sweet…
This is my new go to for thanksgiving sweet potatoes..
