This recipe requires overnight refrigeration
INGREDIENTS
2 cups old fashioned oats
1 cup unsweetened almond milk
1 small cup container of unsweetened applesauce
½ cup egg whites
1 tsp. vanilla extract
1 tsp. molasses
1 tsp. cinnamon
½ tsp. baking powder
½ tsp. salt
Stevia to taste
Blueberries (frozen or fresh) for topping
INSTRUCTIONS
Mix all of the ingredients except for the blueberries together the night before.
Refrigerate overnight.
In the morning, pour the mixture into a greased 9-inch pie plate or the small 4×6 baking pan, smooth it out, and sprinkle with blueberries.
Bake at 350 degrees F for 35 minutes.
We put some greek yogurt drizzled with some honey on the plate with this. It is awesome..
I also have a ton of frozen blueberries from other peoples blueberry bushes in my freezer.. LOL.
So I use those on a lot of things..
This was adapted from Briana Thomas’s Blueberry baked oatmeal (she is pretty awesome with healthy stuff)
I absolutely love oatmeal, I can think of a gazillion ways to make it.. and I love it. Baked is one of my most favorite ways of having it.
