I have been posting a lot of stuff and not writing all that much.. but..  I had a pampered chef party and got a garlic slicer as a free gift… I have been using the hell out of that thing.. it’s the neatest little gadget.. and if you know me.. you know I just absolutely LOVE kitchen gadgets. And the Chicken bone broth adventure from last night…  I needed to figure out something to do with the broth. As well as I went a little nuts at the farmer’s market on squash I needed to also get rid of some of that. We even bought something called a carnival squash or confetti squash??? also a buttersweet squash?  No idea.. the farmer told me I would just love them both, I have not yet cooked either one of those.. but it is coming up..

Here is the concoction I made for tonight..  and My poor crockpot (ole bess) she’s had her share of eating up kilowatt hours this week…

here we go:

Crockpot Butternut Squash and Couscous Soup

Ingredients:
1 big butternut squash cubed
1 can of kidney beans, drained
1 can of hominy, drained
1 can of diced tomatoes
3 cloves of sliced garlic (using the handy dandy pampered chef garlic slicer extroidinare)
3/4 cup couscous
4 Tbsp (Sicilian Spice)
2 bay leaves
5 cups chicken bone broth
mix all of this together in your crockpot and set that bad boy on low, cook for 6-8 hours.
you can add rotisserie chicken to this if you would like.
In the picture, I put fresh parsley and garlic herb goat cheese.
