This weekend we were supposed to do the Ag Expo Half time show at the Rodeo…
well, We were T-Totally rained out it is a sopping mess around here… and it’s still raining..
I’m not really complaining, because we needed the rain and all, but, I’m more excited about the cooler temperatures that are coming in with this weather front.
Saturday I was so stir crazy, I baked all kinds of stuff..
Gluten Free Peanut Butter Cookies, Cranberry walnut power bars.. and I would have kept going but, apparently the galvanized pipe leaving the hot water heater in the house decided to spring a leak.. and we had no hot water, we got that fixed and then batted down in the house, I read books, I played on the iPad I piddled around…. did a shit ton of laundry.. and that lead us to Sunday..

I was about to go stir crazy from the previous day.. so I called my Mom up and off to Columbia we went, we hit TJ Max pretty hard and two stores in the mall, then the Wine store and sat at Starbucks and had some overpriced expensive Coffee, while we people watched..
we nada close encounter on the way to the wine store… I was sitting at the red light, driving my mom’s car.. and our light turned green.. and I looked left, then right and saw a big crown vic car come barreling through the intersection.. and I looked back up at our light and it was green… then the guy hangs a left and comes headed on two wheels squealing across the 4 lanes of traffic up onto the curb, to our left, and hits the light pole…. I looked both ways a few more times, and drove on…. we get to the wine store and we get to talking, and my mom is like wow that was freaky.. I’m glad you didn’t go when the light turned green.. I was like yeah.. but, ever since I took that motorcycle class I wait like 3-4 seconds before I go…
crazy stuff…
So Once, I got home I got to remodeling, took out all the halloween/fall decorations and started burning pumpkin spice crap.. 🙂

Home Made Protein Bars
1 cup uncooked old-fashioned rolled oats
3/4 cup uncooked quinoa
3/4 cup sweetened dried cranberries, coarsely chopped
1/2 cup salted, dry roasted nuts, chopped
1/3 cup flaked unsweetened coconut
2 tablespoons flaxseed meal
1 ounce bittersweet chocolate, finely chopped
1/2 cup unsalted creamy almond butter
6 tablespoons honey
1 tablespoon olive oil
1/4 teaspoon salt
1. Preheat oven to 350°.
2. Spread oats and quinoa on a baking sheet. Bake at 350° for 8 minutes or until lightly browned. Cool. Place oat mixture in a large bowl, and stir in cranberries, nuts, coconut, flaxseed meal, and chocolate.
3. Combine almond butter, honey , oil, and salt in a small saucepan over medium heat; bring to a boil. Cook 1 minute, stirring constantly. Pour almond butter mixture over oat mixture; toss well to coat. Press mixture into an 8-inch square glass or ceramic baking dish coated with cooking spray. Bake at 350° for 13 minutes or until lightly browned. Cool completely in dish. Cut evenly into (1 x 4-inch) bars.
Gluten Free Peanut Butter Cookies
1/4 teaspoon salt
1 large egg white
1 cup chunky peanut butter
1/3 cup honey
1/4 cup brown sugar
1. Preheat oven to 375°.
2. Place salt and egg white in a medium bowl; stir with a whisk until white is frothy. Add peanut butter, honey and brown sugar stirring to combine.
3. Divide dough into 20 equal portions (about 1 tablespoon each); arrange dough 2 inches apart on a baking sheet lined with parchment paper. Gently press them down. Bake at 375° for 10 minutes or until lightly browned.
