- 2 ripe avocados
- 2 cups cooked quinoa
- 1 medium-sized tomato, diced
- 1 cup crumbled feta cheese
- Salt and pepper, to taste
- Preheat oven to 375 F.
- Slice avocados lengthwise and remove the pit by tapping it with a large knife. When the knife is slightly wedged in, twist the knife and pull the pit out of the fruit.
- Using a spoon, scoop out the avocado flesh and place in medium-sized bowl.
- To that bowl, Add cooked quinoa and diced tomato to the avocado pieces and mix together while preserving some chunks of the avocado. For a creamier consistency, use more pressure when mixing to mash the avocado chunks. I used a fork and mashed it up like guacamole, still leaving some chunks
- Place hollow avocado shells in baking dish, and fill each with the stuffing, make sure it’s heaping over the top.
- Sprinkle the crumbled feta cheese over top and place in oven for 10-12 minutes or until cheese is melted.
- Add salt and pepper to taste, then serve immediately.
I made these the other day.. I’m trying to use more quinoa in my diet.. mnore healthy grains and all that..
and yes I’ve officially jumped on the quinoa band wagon.
With Quinoa you have to cook it in Chicken broth or it is pretty horrid..
