Saturday Morning I lost my mind.. as I was taking off to go run my first 5K. while I was driving there at 7am.. I was thinking I was a little nutty for doing this.. but, I got there got my number and got all warmed up and my friend Kristina and I ran it together.. and she’s lost over 100lbs and I’m so proud of her.. (she’s the one that talked me into it). After we finished that.. I headed back home, to change and feed the horses, ride Kismet and going to take the motorcycles out for a spin..
Also Saturday was the annual “pork in the park”, that is where bbq-ers from surrounding towns come and have a bbq cook off…. it’s great to say the least… and I had some of the best brisket I’ve had in years there… and after that we headed off to a joy ride down towards the lake..
we stopped at this little bar on the water.. literally on the water.. and there were a few motorcycles outside.. so we figured we’d give it a shot…
we roll up, park the bikes, go in.. find out it’s a private club.. so we joined… It was a cute little tiki bar type place on a floating dock…. well we get a beer and go towards outside.. and that’s where we were wondering if we were in the wrong place or not….
There were hell’s angels all over that place… So we were thinking.. umm uh oh. but, they turned out to be pretty nice people… So we had a few beers and decided we should head on out..

We went to a church a few towns over to watch a “grand ole opry” which was really nice.. they had the steel guitars and a bunch of people on stage.. it was pretty nice.. and we left there about 8pm and went to this place that everyone says the wings are great…
so we got some wings.. they had great flavor.. but they weren’t big… we made it home not so late.. but, woke up and went to church in the morning… Came back home from church.. and it was time to round up the cattle…

That was about our weekend… The price of cows is up and out of this world awesome.. so we sold off all our feeder steers… Sale day was good 🙂

I was at Publix… and found chicken sausage next to the lamb… (I love lamb) so I picked it up..
Put it on skewers with bell peppers, fresh cut up pineapple and cherry tomatoes….
and grilled it… It’s real good 🙂

Grilled Lamb and Asparagus Couscous |
Asparagus Couscous
- 1 cup couscous
- Zest of 1/2 Lime
- 2 teaspoons vegetable oil
- 1 teaspoon coarse salt
- 8 ounces asparagus, sliced 1/4-inch thick on the bias
Place couscous, lime zest, and oil in a medium, heatproof bowl; toss to combine. Set aside.
Bring 2 cups water to a boil. Add salt and asparagus; cook for 2 minutes. Pour over couscous, and cover tightly with plastic wrap. Let stand for 5 minutes. Uncover, and fluff couscous with a fork.

Lentil and Couscous Salad
- 1 cup pearl couscous
- 1 cup green lentils
- 1½ cup cherry tomatoes
- 1 small cucumber
- 3-4 green onions
- 3 tablespoons olive oil
- 3 tablespoon balsamic vinegar
- 1 tablespoon honey
- 4-5 ounces feta
Rinse lentils, cover with water, and bring to a boil. Reduce heat slightly and continue to cook the lentils at a rapid simmer for 20-30 minutes. Lentils should be tender. Rinse under cold water and set aside.
While lentils are cooking, bring pot of water to a boil and add couscous. Cook until tender, 7-10 minutes. Remove from heat and rinse as well. Both lentils and couscous should be slightly cool.
In a large bowl combine lentils, couscous, cherry tomatoes (sliced in half), cucumber (cut into chunks), and diced green onion.
Shake together oil, vinegar, and honey in a mason jar. Pour over salad and toss.
Finally, crumble two ounces of feta over the salad and stir in. If you like a heavier amount of cheese, add more.
