I’ll just start off with the bad crap and get it over with…
Last night, I rode Tattoo, and then got on Nutter butter.. he was a complete gentleman and I was very happy with him.. well I was riding with my friend Jill.   And our hired hands have some horses that they take in to train.. and they were going to work one of them last night so Jill and I stopped and went over to talk… and the mare that they have was standing there for about 10 minutes.. then all of a sudden turned her butt to me and nutter butter.. and I thought to myself..I better move.. well.. I went to move.. and Nutter butter is a baby and he’s not super responsive yet.. so I went to back him up and out of the corner of my eye I see that mare’s ass come up in the air and I went to pick my foot out of the stirrup and no quicker did I get it out of the stirrup did she nail me square on the bottom of my boot…  It was a solid connecting kick too…. I rolled off the left side of Nutter and Jill was off her horse quicker than I was.. she grabbed my horse and I hobbled over to the chair at the end of the arena.. sat down and my foot was already swelling… I pulled my boot off and my sock and all my toes were already purple and my 4th one was bleeding…   so I did a quick check and decided nothing major was wrong.. then I put my boot back on and went to walk back to the house to untack my horse….  I couldn’t walk.. I hobbled the whole way back and this joker was hurting.. like throbbing hurting.. So Jill helped me untack my horse and she put him back in his paddock.  I called clint to see if he was busy… and I needed him to take me to the office… so he brought the truck to me and loaded me up, I showed him how to take an x-ray and I set myself in position and he took the shot….

I broke the 4th toe…  So I taped it to the one next to it and put some kinesiotape on it to reduce the swelling and loaded it down with biofreeze.  stuck my boot back on and limped back to the truck…
Got home.. started to clean up the new horse trailer..  since we are taking it to Texas this weekend… we are going to a  ranch that is selling out like 60 years worth of breeding lines..  300+ horses…   may come back with a trailer full.. or none…

well..  I’ve been experimenting with  Quinoa lately..

I made this last night..  it’s got radishes, cucumber, shallots, dates and dill…

Quinoa Salad

1 cup quinoa
1 3/4 cups chicken broth
8 small red radishes
1 small cucumber
1 large shallot
2/3 lightly filled cup dill
1/2 lemon, zested and juiced, about 1 1/2 tablespoons
3 tablespoons extra-virgin olive oil
1/2 tablespoon balsamic vinegar
1/2 cup sliced raw almonds
1/2 cup pitted dates, roughly chopped
1/2 cup grated Parmesan cheese
salt and freshly ground black pepper
1 ripe avocado, to serve
Heat a 2-quart saucepan over medium-high heat and add a drizzle of olive oil. When the oil is hot, add the quinoa and cook, stirring, for 1 minute. Pour in the broth, bring to a boil, cover, and turn the heat down to low. Cook for 15 minutes. Turn off heat and let sit, covered, for 5 minutes.
While that is cooling…
Dice the radishes finely. Do the same with the cucumber. Finely dice the shallot. Finely chop the dill fronds. Toss with the quinoa in a large bowl.
Zest the lemon right into the bowl and fold in the zest. Juice the lemon half and whisk the juice together with the olive oil and balsamic vinegar. Toss this with the quinoa.

Fold in the almonds, chopped dates, and Parmesan. Taste and season to taste with salt and pepper. When ready to serve, top with chopped avocado.
