So, yesterday I got to thinking I needed to make some cookies.. it was raining and I’ve been feeling sickly since thanksgiving… this week I have been taking it extremely easy… I have been sleeping and sleeping and sleeping some more.. I actually for a second thought I had Pneumonia so I wound up taking a chest x-ray of myself yesterday… I didn’t exactly take it of my self.. I posed in front of the bucky while my assistant took the x-ray… haha
but, alas, no Pnemonia.. 🙂
Lets get down to business… food business…
Weight watchers is taking videos for a cooking show… I submitted my christmas special from last year. I figure maybe.. just maybe someone will see it and decide I need a show… and pick me up 🙂
Apple Raisin Pecan Oatmeal spice cookies
Heat your oven to 375°F
- 3/4 cup Crisco Butter Flavor All-Vegetable Shortening
- 1 large egg
- 1/4 cup milk
- 1 1/2 teaspoons vanilla extract
- 1 cup Flour
- 1 1/4 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1/4 teaspoon ground nutmeg
- 3 cups old fashioned oats
- 1 peeled, diced granny smith apple
- 3/4 cup raisins
- 3/4 cup coarsely chopped walnuts
Cream shortening, brown sugar, egg, milk and vanilla in bowl of electric mixer.
whisk together flour, cinnamon, salt, baking soda and nutmeg in medium bowl.
Bake 12 minutes or until set.
Sausage Taco Bake
1 can diced tomatoes, un-drained
1 can Rotel
1 can kidney beans, drained, rinsed
½ cup water
2 heaping tbsp taco seasoning mix
restaurant-style tortilla chips, coarsely broken (enough to cover the bottom of the casserole dish)
2 cups shredded cheddar cheese
Sour cream and chopped fresh cilantro for serving
Directions
- Preheat oven to 350°F. Cook sausage and onion in large skillet until sausage is thoroughly cooked.
- Add tomatoes, beans, water and seasoning mix; stir. Bring to a boil. Reduce heat and simmer until slightly thickened.
- Place broken tortilla chips in lightly greased 13×9-inch baking dish; cover with layers of 1 cup cheese, sausage mixture and remaining cheese.
- Bake 30 minutes. Cut into 8 squares. Serve topped with sour cream and cilantro, if desired.
