Instructions
Crockpot Directions:
Peel, core, and slice all of the apples.
Place the apples in slow cooker with the vanilla, cinnamon and nutmeg.
Toss the apples with your hands to coat the apples with the cinnamon and nutmeg.
Set your crockpot to low and cook for 4-6 hours or until apples are very soft.
When apples are soft when poked with a fork, turn off crockpot, open the lid and allow the apples to cool slightly before pureeing.
Stovetop directions:
In a large pot, place all ingredients plus the apple juice.
Bring to a boil, then reduce the heat, cover, and simmer for about 2 hours until apples are soft.
Remove the heat and allow to cool slightly before pureeing.
To finish the apple butter:
Place the cooked apples in a blender or food processor and puree. If you have a smaller food processor, you may need to puree in several batches.
Pour the pureed apples in a glass container with a lid.
Keep in the refrigerator or freezer.
You can also can this apple butter, if you are not going to eat it immediately.
These will keep in the refrigerator for up to 2 weeks.
Notes
You can add 1/2 cup of brown sugar, but I personally think that apples are sweet enough without sugar.
