Method
- In a small crockpot combine all ingredients and stir.
- Cook on high for 1 hour, then turn the heat to low.
- Cook for 5-6 hours, stirring about every hour.
- The mixture will have reduced by 1/3 and turned a darker brown.
- Cool, and transfer the pumpkin butter into an airtight container and keep in the fridge.
Notes
You can substitute the apple juice for water, but the apple juice adds a little something extra to the flavor!
