Easy Homemade Crêpes

Super easy ready to eat breakfast in no time flat! This is a base recipe so you can make these Sweet for a desert or salty for a treat.

Ingredients
  

  • 3 eggs
  • 2 cups all-purpose flour
  • 2 cups milk
  • Olive oil for cooking
  • pinch of salt
Optional
  • pinch of sugar

Method
 

  1. In a mixing bowl, add the eggs and whisk.
  2. Add the milk and whisk to incorporate.
  3. If you want sweet crepes add a pinch or about a teaspoon of sugar, depending on how sweet you want the crepes.
  4. Sift the flour and salt into the egg and milk mixture a little at a time, and whisky well.
  5. This batter will be liquidy and loose, set aside to rest.
  6. In a cup add some olive oil.
  7. Brush some oil into a large frying pan, and heat over medium-low heat.
  8. Laddle some of the batter into the frying pan and swirl around to cover the whole bottom of the pan.
  9. Cook for about 1-2 minutes and flip, cook for 1-2 minutes on the other side.
  10. Place the cooked crepe on a dish and repeat until all the batter is used.

Notes

You can top these with marmelade, jams, jellies, cream of pistacchio, nutella, fresh fruit, really you name it!
