In a sauce pan, melt butter over medium heat.
Add ginger, garlic, and cinnamon stick, and saute the ingredients for 1 minute.
Then add the rice and saute until rice grains are opaque.
Then add coconut milk, sugar, salt, lime zest, pepper, and water.
Bring rice to a simmer.
Stir once, cover, reduce heat to low, and simmer for about 15 minutes, checking the rice every now and then to make sure it is not burning or sticking to the saucepan. Add extra water and coconut milk, 1/4 cup at a time, if needed.
Once the rice is soft and finished cooking, fluff the rice with fork, cover the rice again, and let it rest for 5 minutes. Transfer the rice to a serving dish and serve with your favorite meats, especially seafood!
